For a delicious low-carb meal serve these pork skewers with chargrilled nectarines wrapped in Parma ham or serve them tapas-style with drinks.


3tbsp olive oil

zest and juice 1 lemon

2 garlic cloves, crushed

1/2tsp ground ginger

1tsp ground coriander

2tbsp parsley, chopped

500g pork fillet, cut onto small chunks

lemon wedges or chargrilled nectarines wrapped in Parma ham, to serve




1 Whisk together the oil, lemon zest and juice, garlic, ginger, coriander and parsley in a shallow dish.

2 Add the pork and season generously. Stir to coat in the marinade.

3 Take 18 mini wooden skewers and thread 3 pieces of meat on each one.

4 Preheat a grill, griddle or barbecue until hot, then cook the skewers for 10 mins, turning as needed until lightly charred and cooked through.  Serve with lemon wedges or chargrilled nectarines wrapped in Parma ham.

Tip: Get ahead and marinate the meat for a few hours to intensify the flavours.
