Pop the whole bag of value peppers in the microwave and a few minutes later you have ‘roasted peppers’ – so much cheaper than buying them ready roasted!
SERVES 4 – PREP 5 MINS – COOK 10 MINS
1 packet (5) peppers
200g spaghetti
200g frozen leaf spinach
1tsp garlic puree or paste (such as Very Lazy)
1 Pierce the bag of peppers a couple of times and microwave on High for 5 mins.
2 Meanwhile, cook the spaghetti in boiling salted water for 10 mins until tender, but with a slight bite.
3 Put the spinach into a bowl with the garlic and microwave on High for 3 mins.
4 Tip the spinach into a sieve resting over a bowl and use a potato masher to squeeze out all the water.
5 Carefully remove the peppers from the microwave . Cut off the stalk end and pull out with the seeds. Slice.
6 Drain the spaghetti, add the spinach and peppers and season generously. Toss together and serve immediately.
Per serving: 240 cals, 2g fat (0.5g saturated fat)46 g carbs
