And it all started with a late night snack!

When it comes to comfort food, nothing quite beats the simplicity of a grilled cheese sandwich.

So you can imagine our excitement of the prospect of a café entirely dedicated to creating the perfect blend of fresh toasted bread and creamy, melted cheese.

The dream isn’t a reality just yet, but long-term friends Nisha and Nishma are currently looking for the flagship location for the first grilled cheese sandwich chain in London.

So what’s the secret to the perfect grilled cheese sandwich? It’s all in the ingredients…

Grill My Cheese use organic sourdough bread, their infamous cheese blend of cheddar, mozzarella, and Gruyere, free-range meat, and homemade ketchup. Their one rule was to steer clear from synthetic white bread and processed plastic cheese.

Next they grill with an industrial griddle and then seal the sandwich in a cast-iron press for authenticity.

GMC was borne from late night snacking sessions when they were travelling together in Miami. Grilled cheese is big over there, and soon became a ritual for the end of a night out.

It wasn’t long before the pair started experimenting by making their own sandwiches and three years on have sold more than 45,000 toasties at a range of festivals, food markets, and corporate events.
