Jars of pickled herring are perfect instant protein, drain and mix with soured cream and white wine vinegar for a super speedy healthy meal. Go on, give it a try!

SERVES 6  – PREP 5 mins – COOK 10 mins

200g pasta shells

300ml soured cream

2tbsp white wine vinegar

275g jar herrings in sweet and spicy marinade, drained

3tbsp dill, chopped

1 red pepper, deseeded and chopped

1/4 cucumber, chopped





1 Boil the pasta in a large pan of boiling salted water for 10 mins.

2 Meanwhile, pour the soured cream into a bowl and mix together with the white wine vinegar. Add the herrings, dill, peppers and cucumber.

3 Drain the pasta and stir together with the other ingredients. Season generously and serve warm or cold.

Per serving: 320 cals, 17g fat, (6g saturated), 31g carbs
