Lentils will keep you feeling full for hours! This spiced carrot and lentil soup is the perfect winter warmer.
Serves: 4
Cook time: 45 mins
600g carrots, scrubbed and chopped
120g red split lentils
1.5 litre hot vegetable stock
1tsp ground coriander
4 tbsp soured cream (optional)
1/2 teaspoon coriander seeds, crushed (optional)
Method
1 Put the carrots into a pan with the lentils, stock, ground coriander and seasoning.
2 Bring to the boil and simmer for 25 minutes until the carrots are tender.
3 Pour the soup into a blender and whizz until smooth.
4 Serve topped with a spoonful of soured cream and a sprinkling of crushed coriander seeds, if you like.
