Lamb neck fillet cooks really quickly – make sure you cut off any fat to keep the calories down. A lovely sharing supper.
SERVES 4 – PREP 10 MINS – COOK 15 MINS
1tsp olive oil
400g lamb neck fillet, cut into chunks
1 garlic clove, crushed
1 red onion, peeled and sliced
1/4 white cabbage, shredded
1 large carrot, cut into strips with a peeler
1⁄2 a cucumber, chopped
Pack of 8 tortillas
200g carton reduced fat guacamole
1 Heat the oil in a large frying pan, add the lamb and garlic and fry for 5 mins, stirring occasionally.
2 Add the onion and cook for 5 more minutes, until both are cooked.
3 Warm the tortillas in a microwave, according to the pack instructions.
4 Tip the lamb and onion into a sieve over a bowl to drain off the fat. Serve it in a hot bowl.
5 Make up wraps with the lamb, cabbage, carrot and cucumber, adding a few dollops of guacamole. Roll them and serve.
