Using three staples of Asian cooking – ginger, garlic and chilli – this dish is packed with warmth and flavour. Crunchy Superfree veg and piled-high noodles team with aromatic beef to create a speedy dish that you’ll want to make again and again!


Slimming World beef pad ThaiSERVES 4 – READY IN 40 MINS PLUS MARINATING

400g lean beef frying steaks, all visible fat removed, thinly sliced

3 tbsp light soy sauce

Salt and freshly ground black pepper

low calorie cooking spray

2 garlic cloves, peeled and crushed

1cm piece root ginger, peeled and finely chopped

2 red chillies, deseeded and finely chopped

1 red onion, peeled and finely chopped

100ml vegetable stock

1 tbsp Thai fish sauce (nam pla)

2 tbsp dark soy sauce

2 carrots, peeled and cut into matchsticks

200g mangetout, thinly sliced

250g fresh bean sprouts, rinsed

250g dried flat rice noodles

100g cooked and peeled small prawns

1 egg, lightly beaten

spring onions, finely sliced

A small handful of finely chopped fresh coriander

Lime wedges, to serve


1 Place the beef in a ceramic bowl with the light soy sauce and season well. Cover and leave to marinate for 10-15 minutes at room temperature.

2 Spray a wok or large frying pan with low calorie cooking spray and place over a high heat. Add the beef strips and stir-fry for 3-4 minutes or until cooked through. Remove with a slotted spoon and set aside.

3 Place the garlic, ginger, red chilli, red onion, stock, Thai fish sauce and dark soy sauce in the pan and heat gently for 4-5 minutes.

4 Turn the heat to high, add the vegetables and stir-fry for 4-5 minutes until they are just tender.

5 Prepare the noodles according to the packet instructions and drain well.

6 Add the noodles and prawns to the vegetable mixture in the pan.

7 Drizzle in the beaten egg, toss to mix well and cook for 1-2 minutes until the egg is just cooked through.

8 Remove from the heat and stir in the reserved beef. Divide between plates, scatter over the spring onions and coriander and serve with lime wedges.
