High protein steak is so speedy to cook and really filling. Just what you need when you’re starving! Low carb and luscious – perked up with a tangy tomato sauce.
SERVES 2 – PREP 5 MINS – COOK 10 MNS
1tbsp olive oil
1 garlic clove, crushed
200g cherry tomatoes, halved
pinch caster sugar
1tbsp basil leaves, chopped
2 rump steaks, fat trimmed
1tbsp balsamic vinegar
Green salad, to serve
1 Heat a frying pan. Add 2tsp olive oil and garlic. Add tomatoes, sugar and half the basil. Season with salt and ground black pepper and fry for 5 mins until tomatoes are softened and breaking down.
2 Meanwhile, heat a griddle pan. Oil the steak on both sides and season generously. Fry for 2-4 mins each side – this will give you a medium rare steak. If you prefer yours well done, cook for a few extra mins each side. Put on to plates and rest for 5 mins.
3 Add balsamic vinegar to tomato sauce, with rest of basil and any steak juices.
4 Serve the steaks with sauce on the side, a green salad and crusty bread, if you like.
