Don’t forget it’s Thanksgiving this Thurs (22nd Nov). We’ll be celebrating with this very quick, easy and tasty chunky fish chowder. It really is a delicious meal in a bowl with chunks of haddock, salmon, potato, sweetcorn and celery.
SERVES 4 PREP 10 MINS COOK 20 MINS
1tbsp olive oil
1 onion, chopped
2 sticks celery, chopped
1 litre milk
4 medium potatoes
2tbsp instant thickening granules (such as McDougalls)
250g smoked haddock fillet, skinned ad cut into chunks
250g salmon fillet, skinned and cut into chunks
300g frozen sweetcorn
2 tbsp chopped fresh parsley
1 Heat the oil in a large pan. Add the onion and celery and cook gently for 5 mins until softened. Pour in the milk, add the potato and bring to the boil. Reduce the heat and simmer for 5 mins. Stir in the thickening granules.
2 Add the smoked haddock, salmon and sweetcorn. Simmer for 7 mins until the fish is just tender. Season and sprinkle with parsley, to serve.
Food Ed Felicity’s tip: If you don’t have thickening granules you can use 2tbsp cornflour mixed with a little cold water to make a smooth paste.
