Any dinner that’s healthy, satisfying and quick to make gets our vote. Fast and easy prawn and tomato linguine ticks all these boxes and more because it tastes great too!
SERVES 4 – PREP 5 MINS – COOK 15 MINS
200g wholemeal linguine
Low-cal cooking spray
1 onion, chopped
2 garlic cloves, crushed
1 red chilli, deseeded and chopped
200g courgettes, sliced
200g peeled king prawns, defrosted if frozen
200g passata
1tbsp sun-dried tomato paste
2tbsp roughly chopped flat-leaf parsley
1 Cook the linguine in a large pan of boiling salted water for 10-15 mins, or according to packet instructions, until just tender.
2 While the linguine is cooking, heat a non-stick frying pan. Add a couple of squirts of low-cal cooking spray and the onion. Fry for 3-4 mins to soften then add the garlic, chilli and courgette and fry for 3 mins.
3 Add the prawns, passata and sun-dried tomato paste. Bring to the boil then reduce the heat and simmer for 2 mins. Season with salt and freshly ground pepper and stir in most of the parsley.
4 Drain the linguine, add to the sauce and mix together. Serve straightaway sprinkled with the remaining parsley.
