Poached egg on bubble & squeak

Comfort food isn’t off the menu with these satisfying bubble and squeak cakes.

What you need:

✱ 300g potatoes, peeled 
and chopped
✱ 300g parsnips, peeled 

and chopped
✱ 200g shredded greens
✱ 2tbsp wholegrain mustard
✱ 2tsp sunflower oil
✱ 4 eggs

What you need to do:

1 Put the potatoes and parsnips in a pan, cover with cold water, bring to the boil and simmer for 5-8 mins until tender. Drain and mash.
2 At the same time, microwave the greens in 
a bowl with 2tsp water, covered with cling film, for 1 min. Drain and squeeze out any excess water.
3 Mix the greens and mash with the mustard and shape into four even-sized patties.
4 Heat the oil in a frying pan, add the patties and cook for 5 mins on each side until golden. Meanwhile, fry the eggs in a non-stick pan with spray oil for 3 mins until the whites are set and the yolks still runny. Remove from the pan with a slotted spoon and serve on top of the patties.
