350g penne pasta
100ml olive oil
1 red onion, chopped
250g green beans, halved
250g cherry tomatoes
5tbsp capers
4tbsp black olives
2tbsp lemon juice
150ml soured cream
3tbsp parsley
200g tuna, drained from brine
1 Cook the pasta in boiling salted water for 10 mins until just tender.
2 Meanwhile, heat 1tbsp olive oil and fry the onion for a few mins, to soften.
3 Add the beans to the boiling pasta for the last 3 mins of cooking time.
4 Put the tomatoes, capers and olives into a large bowl. Put the remaining olive oil, lemon juice, soured cream and seasoning into a jar, seal and shake to mix.
5 Drain the pasta and beans, add to the bowl with the tuna and dressing. Toss together to combine.Per serving: 439 cals, 20.5g fat (5.5g saturated) 46g carbs

TOMATO SALSA NICOISE PASTA

Fry 1 chopped onion in 2tbsp olive oil for 5 mins, to soften. Add a crushed garlic clove and 400g canned tomatoes, simmer for 5 mins. Stir in a few generous spoonfuls of leftover pasta nicoise. Warm through, season and serve.

Boil 2 eggs for 8 mins until just firm, drain and cool. Cube 2 slices bread, fry in 1tbsp olive oil with 1 crushed garlic clove until golden. Break up lettuce leaves from 1 little gem lettuce, put into 2 bowls (or lunch boxes). Tip in a couple of generous spoonfuls of Tuna nicoise pasta into each. Season and scatter with croutons and drizzle each with 1tbsp dressing.
