250g portabellini mushrooms
4tsp chilli jam
2 x 140g packs mild English goats cheese
1 garlic clove, crushed
2tsp thyme leaves
200g vine cherry tomatoes
1 Trim off mushroom stalks and top each one with 1/2 tsp chilli jam.
2 Slice cheese and put a goats cheese round on top of each mushroom.
3 Scatter over garlic and thyme and season. Drizzle with olive oil.
4 Cook over hot coals on a barbecue or grill with cherry tomatoes for 10 mins until softened
