500g beef mince
1 onion, grated
1tbsp sundried tomato paste
1tsp chilli powder
1tbsp Worcestershire sauce
25g natural dried breadcrumbs
1 large egg, beaten
1tbsp olive oil
1 yellow pepper, deseeded and chopped
2tbsp coriander, chopped
200g pot tomato salsa
4 ciabbatta rolls, split
4tbsp light mayonnaise
I/4 iceberg lettuce, shredded
150g pot guacamole
1 Put the beef mince into a bowl, season generously with salt and ground black pepper. Add tomato paste, chilli powder, Worcestershire sauce, breadcrumbs and eggs.
2 With damp hands, shape into 4 evenly sized burgers, using a plain ring to help make an even shape.
3 Put burgers into grill pan, drizzle with oil and cook under a preheated hot grill for 15 mins, turning, as needed until browned.
4 Stir pepper and coriander into tomato salsa. Toast rolls.
5 Spread rolls with mayonnaise, top with lettuce and burgers. Serve dollopped with salsa and guacamole.
