These delicious cappuccino cupcakes with a hint of chocolate are a real treat especially as you can enjoy them without feeling too guilty.
MAKES 8 – PREP 20 MINS plus cooling – COOK 15 MINS
1tbsp coffee granules
3 eggs
75g light soft brown sugar
60g plain flour
15g cocoa powder
TOPPING
100g light soft cheese
100g Greek yogurt
2tbsp icing sugar
Cocoa powder, to dust
1 Heat the oven to 190C, Gas 5. Grease 8 holes of a muffin tin and line the bases with baking paper or line the muffin tin with paper cake cases. Place the coffee granules in a mug and dissolve in 2tbsp boiling water. Set aside to cool.
2 Using an electric mixer, whisk together the eggs and brown sugar until really thick and creamy. The mixture should be thick enough to leave a trail when the whisk is lifted. Sift the flour and cocoa powder over the mixture and lightly fold in with the coffee and just mixed. Divide the mixture between the muffin tin and bake for 10-15 mins until risen and springy to the touch. Cool on a wire rack.
3 For the topping, mix together the soft cheese, yogurt and icing sugar. Spoon onto the cakes and dust with cocoa powder.
Per serving: 150cals, 5.5g fat (2.5g saturated), 19g carbs
