Want pancakes that are a little bit posh? For Shrove Tuesday, Gow’s London has produced a real grown-up take on the traditional pancake – six oysters, served in a pancake pocket and delicately smothered with a zesty dollop of lemon marmalade. Sounds delicious! If you can’t get to London, don’t panic! We’ve got the recipe.

Six oysters

1 egg
200g flour
8fl oz. milk
Lemon juice
Zest of lemon

50ml/2fl oz Lemon juice
Lemon rind and zest
1kg/2lb 4 oz Sugar
2kg (4 lb 8 oz) white, thinly sliced onions
250 ml (9 fl oz) white wine
3 tbsp vinegar


  1. Boil the marmalade ingredients together and reduce until thick. Set in fridge.
  2. For the pancakes, whisk the produce together and fry in a shallow pan, making sure to cook the pancakes quite thick, so as to cut them out into rings.
  3. Make a pocket to put the oyster in, once warm put a small teaspoon of lemon marmalade with the oyster and serve to your lucky recipient immediately.
