Jamie Olivier swears you can make meals in just 15mins. We can match that cooking time, but we reckon you’ll need 20mins if you count the time to get out the ingredients! A quick lamb dish with tasty veg is a great mid-week dinner.
SERVES 4
4 lamb cutlets
zest and juice 1 lemon
2 garlic cloves, crushed
1tsp dried oregano
3tbsp olive oil
1 leek, washed and sliced
150ml vegetable stock
100g green beans, trimmed
400g can cannellini beans, rinsed and drained
Lemon wedges, to serve
1 Put the lamb into a shallow dish and season generously with salt and ground black pepper. Sprinkle over the garlic and oregano and 1tbsp olive oil.
2 Heat the rest of the oil in a pan, add the leek and fry for 10 mins until softened.
3 Meanwhile, heat a heavy based pan and fry the lamb chops for 10 mins, turning as needed.
4 Add the stock to the leeks, with the green beans and cannellini beans. Cook for a few mins to warm through.
5 Season the beans and serve with the chops with extra lemon wedges, if you like.
