Enchiladas
This spiced veggi filling is so fast and easy. If you’ve meat eaters to please fry 300g lean minced beef with the onions and simmer everything together for 30 mins before filling tortillas.

3tbsp vegetable oil
3 onions, sliced
2 garlic cloves
2 red peppers, deseeded and sliced
350g jar Mexican chilli classic sauce (we used Lloyd Grossman’s) £2.09
8 soft corn tortillas
150g cheddar cheese, grated
4 pickled green chillies
1 Heat 1tbsp oil and fry onions for 5 mins, to soften. Add garlic and peppers and cook for 5 mins to soften.
2 Add chilli sauce and warm through gently.
3 Heat the rest of the oil in a large frying pan, flash fry each corn tortillas to warm through.
4 Put a warm tortillas into a serving dish pour in some chilli sauce and sprinkle over some cheese. Fold over, reapeat with the rest of the tortillas.
5 Pour some more warm chilli sauce over the top of the tortillas, finish with pickled green chillies and serve.
