Gorgeous rich gooey chocolate mousse with a surprise layer of berries soaked in sweet blackcurrant liqueur. Try it with a dollop of crème fraiche

150g frozen mixed berries, defrosted
1tbsp caster sugar.
150ml cassis (blackcurrant) liqueur
200g plain chocolate (Bournville), broken into pieces
100g unsalted butter, cubed
4 eggs, separated
1 Put the berries, sugar and cassis into a pan and simmer for a few mins to soften the fruit. Take 6 large shot glasses and spoon the fruit into the base of each. Boil the cassis for a few mins until it becomes syrupy.
2 Melt the chocolate and butter into a heatproof bowl in microwave on medium for 30 second bursts, until melted. Stir to combine.
3 Whisk the egg whites until softly peaking.
4 Stir the egg yolks into the melted chocolate until smooth and glossy. 5 Gently fold in the whisked egg whites. Carefully spoon the mixture into pots and chill for at least 1 hour.
