In a hurry and fancy curry? You can make this easy cauliflower and lentil balti in just 30 mins.
READY IN 30 MINUTES – SERVES 4
1tbsp vegetable oil
1 onion, chopped
2 garlic cloves, crushed
1tsp ‘very lazy’ ginger
3tbsp balti curry paste
150g red split lentils
350g sweet potatoes, quartered
1.5litres vegetable stock
50g creamed coconut, grated
1 cauliflower, cut into florets
small bunch coriander leaves
1 Heat oil in a large pan, add the onion, garlic and ginger. Cook for 4 mins, add the curry paste, then stir-fry for 1 min.
2 Add lentils, sweet potatoes, stock and coconut. Bring mixture to the boil and simmer for 15 mins.
3 Season and add cauliflower. Cook for 10 mins, until tender. Serve sprinkled with coriander.
