Super-lean minced beef is the great value speedy choice for a healthy midweek curry

1tbsp sunflower oil

1tbsp red or yellow Thai curry paste

400g lean minced beef

2tbsp Thai fish sauce

1tsp sugar

175g basmati rice

4 curry leaves, optional

4 pak choi, quartered lengthways

4 spring onions, sliced


1 Heat oil in a large wok or frying pan, fry curry paste for 1 min. Add the minced beef and stir fry for 3 mins, stirring to break up the meat.

2 Add 100ml water, fish sauce and sugar and simmer gently for 5 mins.

3 Cook rice in 400ml salted water, bring to the boil, then cover and simmer for 10 mins until rice is tender and liquid absorbed.

4 Add pak choi and spring onions and cook for 1 min – just until it is wilted. Serve the curry with the rice.
