Pimp up your pasta with this protein rich fish dish perfect for the whole family! This tasty salmon bolognaise is a brilliant twist on the classic dish and ideal for dieters!

What you need:
250g salmon fillet, sliced
finely grated zest and juice of 1 lemon
2tbsp olive oil
1 vegetable stock pot
250g spaghetti
1 onion, chopped
2 garlic cloves, crushed
1 red pepper, deseeded and chopped
150g tenderstem broccoli
200g passatta
What you need to do:
- Heat oven to 200C, Gas Mark 6. Put salmon onto a non-stick baking tray. Season generously and sprinkle over lemon zest and juice and 1 tsp olive oil. Bake for 10 mins.
- Meanwhile, put the stock pot into a pan of water, bring to the boil, add the spaghetti and cook for 10 mins, add broccoli for the final 3 mins of cooking time.
- Heat remaining oil in a frying pan, add the onion, garlic and pepper and simmer gently for 5 mins. Add passata and simmer for a few mins.
- Drain pasta and broccoli and combine with sauce. Serve with salmon and broccoli and add more veggies of your choice if you wish.
Per serving: 445cals, 14g fat (2.5g saturated fat), 53g carbs
