We love this easy to make home made potato, egg and cress salad! This take on the classic potato salad is great served with grilled gammon steaks or bacon…and can even be enjoyed as a light lunch too!
SERVES 4 – PREP 10 MINS – COOK 15 MINS
What you need:
500g new potatoes
3 celery sticks, chopped
150g radishes, thinly sliced
1 punnet mustard and cress
150ml Pizza Express light dressing
2tbsp chives, chopped, if you like
What you need to do:
- Cook the potatoes in a pan of boiling salted water for 15mins.
- Meanwhile, plunge the eggs into boiling salted water, return to the boil and cook for 8 mins.
- Drain the eggs. Cool them quickly under cold running water, then slice.
- Put the potatoes and celery into a large bowl, top with the radishes, mustard and cress and chives if using. Pour on the dressing and gently combine to serve.
