Everyone will LOVE this crowd pleasing beef recipe, it’s the ultimate way to make chilli mince fajitas at home. But, there’s no easy way to eat these, you just get stuck in and clean up later!

What you need:
1tbsp vegetable oil
2 small red onions, sliced
500g lean beef mince
2tsp chipotle paste
1tbsp smoky bbq fajita season mix
400g can tomatoes
400g can red kidney beans, drained and rinsed
Corn tortilla wraps, sliced avocado, soured cream and fresh coriander, to serve
What you need to do:
- Heat the oil in a large pan. Add the red onion and cook over a gentle heat for 5 mins to soften. Remove half the onions from the pan and set aside.
- Add the mince to the pan, increase the heat and cook, stirring, for 3-4 mins until browned. Add the chipotle paste, fajita seasoning and tomatoes. Bring to the boil, reduce the heat, cover and simmer for 15 mins.
- Add the red kidney beans and heat through for 5 mins. Serve on warmed corn tortillas with soured cream, the reserved red onions, sliced avocado and fresh coriander leaves.
