This mince stir fry is the ideal diet-friendly dinner! Turkey thigh mince is a great value buy and has plenty of flavour – win win in our books.

What you need:
200g green beans
1tbsp sesame oil
1 red pepper, deseeded and cut into strips
1 bunch spring onions, cut into long strips
500g turkey thigh mince
2 garlic cloves, crushed
2tsp red chilli paste
2tbsp ketjap manis
2tbsp Thai fish sauce
Rice noodles or rice, to serve
What you need to do:
- Lightly cook the green beans in boiling water for 3 mins, drain. At the same time, heat 2tsp sesame oil in a large frying pan or wok. Add the red pepper and spring onions and stir-fry over a high heat for 3 mins to soften. Tip the vegetables onto a plate.
- Add the remaining sesame oil to the pan with the turkey thigh mince. Stir-fry over a high heat for 5 mins until browned and cooked through. Reduce the heat to medium and add the garlic, chilli paste, ketjap manis and Thai fish sauce. Stir and simmer for 5 mins until sauce is sticky.
- Return the pepper and spring onions to the pan with the green beans. Toss together and heat through for 2 mins. Serve with rice noodles or rice.
Food editor’s top tip: Ketjap manis is an Indonesian sweet soy sauce available in most supermarkets. If you don’t have any, use soy sauce with a pinch of brown sugar.
