Look out for this interesting Keralan curry paste and fresh curry leaves to liven up prawns.
SERVES – 4

1tbsp vegetable oil
1 onion, finely chopped
30 curry leaves (available from Asda)
3tbsp Keralan curry paste
200ml vegetable stock
600ml cocnut milk
300g green beans, trimmed and cut into 4
400g large raw peeled prawns
1. Heat oil in a large pan, fry the onion for a few mins to soften. Add the curry leaves and fry for 1 min.
2. Stir in the Keralan curry paste and cook for 2 mins.
3. Stir in the stock and coconut milk and bring to the boil. Simmer for 12 mins, to allow the flavours to develop and the sauce to thicken a little.
4. Add the green beans, cook for 5 mins. Stir in the prawns and cook for 3 mins. Season and finish with coriander leaves.
