1 madeira cake, sliced

3tbsp limoncello

400g frozen mixed berries,(blackberries, raspberries, red and blackcurrants), defrosted

4tbsp golden caster sugar

4tbsp Crème de Cassis

For the topping:

227g carton clotted cream

170g pot 0% fat Greek yogurt

3tbsp golden caster sugar

1tbsp vanilla bean paste

2tbsp toasted flaked almonds

1 Arrange the Madeira cake into the based of a trifle dish. Drizzle over the limoncello, then tip the berries on over the cake.

2 Sprinkle over the caster sugar an d pour on the crème de cassis.

3 Put the clotted cream into a bowl and stir together with the Greek yogurt, sugar and vanilla bean paste.

4 Spoon creamy mixture over the fruit and sprinkle on the flaked almonds. Chill for up to 2 days.
