Serve this salad whilst the chorizo’s warm – but it’s just as tasty cold!
SERVES 4 – PREP 10 MINS – COOK 5 MIN
1 small red onion, chopped
250g chorizo sausages, sliced
4 sticks celery, finely sliced
1 orange pepper, deseeded and chopped
410g can cannellini beans, rinsed and drained
150g (5oz) sun-blush tomatoes, drained,
4 spring onions, trimmed and sliced
4tbsp light French dressing
Several parsley leaves
Crusty bread, to serve
1 Heat the oil, fry the onion and chorizo for a few mins.
2 Put the celery, pepper, beans, sun-blush tomatoes and spring onions in a bowl.
3 Pour in the chorizo and French dressing, stir and mix together. Serve with crusty bread.
Tip: Splash 150ml white wine into the chorizo and bubble for a few mins for a boozy treat!
