Boursin is French cream cheese with a full garlic and herb flavour. Added to warm pasta it melts to give it the wow factor. Boursin is also perfect with roasted veg.
SERVES 4 – PREP 5 MINS – COOK 25 MINS
400g ready-to-roast vegetable selection (red onions, courgettes, peppers, cherry tomatoes, garlic)
200g pappardelle pasta
150g Boursin garlic and herb cheese
Several basil leaves
1 Heat the oven to 220C, Gas 7. Roast the vegetables for 25 mins until tender and starting to char.
2 Meanwhile, cook the pasta in boiling salted water for 10 mins, until al dente.
3 Drain the pasta, put the Boursin into the pan and gently warm through for 2 mins.
4 Tip in the drained pasta, season generously and stir in the roasted vegetables to serve.
Per serving: 584 cals, 24g fat (12g saturated fat) 82g carbs
Food ed Felicity’s tip: Leave 4tbsp of the pasta cooking liquid in the pan, so when the Boursin cheese melts it gives a more saucy consistency.
