Check out these fab berry chocolate heaven pancakes – they’re simply delicious and a real treat. You can make the pancakes in advance and freeze, just defrost and warm through in the oven before serving.


225g plain flour

4 eggs

600ml milk

Sunflower oil for frying


150ml pot double cream

200g bar plain chocolate (such as Bournville), chopped

1tbsp golden syrup

150g frozen mixed summer fruits, defrosted

Vanilla ice cream


1 Put the flour in a bowl with the eggs and milk. Whisk together to make a smooth batter, the consistency of double cream.

2 Heat 1tsp sunflower oil in a 15cm non-stick pan. Pour in just enough mixture to cover the base of the pan, tilt to cover.

3 Cook for 30 seconds until the pancake batter is firm on the base.

4 For the topping, heat the cream in a small pan until hot but not quite boiling. Place the chocolate in a bowl with the golden syrup. Pour over the hot cream and stir until melted and smooth. Spoon the fruits over the warm pancakes, add scoops of ice cream and pour over the warm chocolate sauce.
