Start off cooking this chicken slowly in the oven – so you’ll be confident it’s cooked through, then finish it off on the barbie to add a gorgeous smokey flavour boosted with paprika, lemon and thyme.

6 chicken legs
6 garlic cloves, sliced
1tbsp chicken seasoning
2tsp oak smoked paprika
2 small red onions, sliced into rings
small bunch of thyme
2tbsp olive oil
1 Heat oven to 180C, Gas 4. Line a large roasting tin with foil. Put the chicken into the tin. Slash the chicken several times with a knife. Push garlic cloves into chicken slits. Finely grate zest of 1 lemon and sprinkle over with chicken seasoning and paprika with salt and ground black pepper.
2 Top chicken with onions and squeeze over the juice of 1 lemon. Cut remaining lemon into wedges and pop under the chicken pieces. Sprinkle over thyme, remaining garlic and drizzle with olive oil.
3 Wrap in foil and and cook for 35 mins until meat is tender.
4 Next, cook on a hot barbie for 15 mins to char-grill.
