Baked eggs with ham and chorizo is one of our favourite, flavoursome one pot meals! You can serve it for brunch or an easy Spanish lunch…
SERVES 4 – PREP 10 MINS – COOK 20 MINS
1 large onion, chopped
3 tablespoons olive oil
2 garlic cloves, crushed
½ tsp paprika
250g chorizo sausage, sliced into chunks
400g can chopped tomatoes
1tbsp sherry
2 roasted peppers, drained from jar, thinly sliced
50g frozen peas
70g pack Serrano ham
4 medium eggs
1 Heat the oven to Gas 6 or 200C. Fry the onion in the oil for a few mins, to soften. Add the garlic and cook for 1 min.
2 Add the paprika and chorizo and fry for 5 mins. Stir in the tomatoes and sherry and simmer for 5 mins.
3 Mix in the peppers and peas. Pour into the dish. Crumple the Serrano ham into the dish.
4 Make 4 hollows in the mixture and break in the eggs. Season and make for 10 mins until the eggs have just set.
Per serving: 451 cals, 32g fat, (saturated 10g), 13g carbs
Tip: Serrano ham is similar to Italian Parma ham, but has a deeper flavour and is less fatty.
