Frozen veg is a great time saver and it’s such an easy way to up your daily 5 a-day fruit and veg portions. There’s no need to peel and chop and you can just add a handful to everyday meals. We’ve just discovered frozen butternut squash pieces – it’s perfect for this speedy meaty omelette with chorizo sausage.


2tbsp olive oil

1 red onion, sliced

350g frozen butternut squash pieces (availble from Waitrose)

120g diced chorizo

6 eggs, lightly beaten

120g goats cheese, sliced

3tbsp chopped fresh chives





1 Heat the oil in a large non-stick pan. Add the onions and butternut squash and fry for 10 mins to soften.

2 Add the chorizo and then pour in the eggs. Cook for 5 mins. Heat the grill.

3 Add the goats cheese and chives to pan, cook for a couple of minutes, then pop under a hot grill for a few mins to firm up.
