Lisa Faulkner sunshine biscuit recipe

These biscuits are properly melt-in-the-mouth delicious. I have been making them since I was about seven years old and passed my Brownie Hostess Badge with them!

Makes about 15

125 g (4 oz) butter, plus extra for


125 g (4 oz) caster sugar

1 teaspoon golden syrup

1 teaspoon bicarbonate of soda

1 teaspoon boiling water

125 g (4 oz) porridge oats

125 g (4 oz) self-raising flour


What to do:

1. Preheat the oven to 160C (325F), gas mark 3 and grease a

baking tray.

2. Put the butter, sugar, syrup, bicarbonate of soda and water into a

large saucepan and melt. Take off the heat, add the oats and flour

and stir to combine.

3. Place teaspoon-sized balls on the prepared baking tray, leaving

space between them to spread out.

4. Bake in the preheated oven for 10–15 minutes until browned.

Cool on a wire rack.
