Why not shape your sausages into rounds for tasty meatballs ( or use regular minced meat ones). Roast them together with vegetables for a scrumptious healthy spaghetti based meal with a difference.
8 sausages, skin removed
1 onion or few spring onions, chopped
2 garlic cloves, crushed
2 courgettes, diced
1 red or yellow pepper, deseeded and diced
1tbsp olive oil
400g can tomatoes
1tbsp chilli ketchup
1 Heat the oven to 200C or Gas 6. Shape the sausages with some of the onion or spring onions into balls. Put into a large non-stick roasting tin, add the rest of the onion, garlic, courgettes and drizzle with 1tbsp olive oil. Roast for 20 mins.
2 Stir everything together, add the tomatoes and chilli ketchup and cook for 10 more mins.
3 Meanwhile, cook the spaghetti according to pack instructions. Drain then toss together.
