An apple cake with spices and dried fruit is about as sublime a baked treat as you can get. Lovely at any time of the day, this cake is the perfect weekend treat.


Apple and sultana cake

An easy all-in-one cake

3 eating apples, peeled

and grated

125g melted butter

150g self-raising flour

120g caster sugar

2 tbsp soft brown sugar

50g sultanas

20g piece of fresh root ginger,

peeled and finely grated

½ tsp ground cinnamon

3 eggs


1 Grease a 900g loaf tin, measuring about 22 x 12cm and line the base with baking parchment. Preheat the oven to 180°C/Gas 4.

2 Put all the ingredients in a mixing bowl and beat with a wooden spoon to make a smooth batter.

3 Spoon the mixture into the prepared loaf tin and bake in the oven for 30-35 minutes or until a skewer inserted into the middle of the cake comes out clean. Remove the cake from the tin and leave it to cool on a wire rack. Serve in slices with crème fraiche if you like.
