These dinky quorn burgers are fab and the perfect fun meal for two without all the calories! They make the ideal dinner or a tasty family meal. Plus they only take 15 minutes to cook – win, win!

What you need:
241 calories 300g Quorn mince
1 onion, grated
3 crackers, crumbled
2tbsp tomato-and-chilli paste (we used Sacla)
1 egg white
1tsp olive oil
1 large beef tomato, sliced
4 mini white rolls
2 gherkins, sliced
What you need to do:
- Heat the oven to 220°C/Gas 7. Put the Quorn mince in a blender with the onion, seasoning, crumbled crackers, tomato-and-chilli paste and egg white.
- Whizz everything together until smooth.
- Line a baking tray with a non-stick Teflon sheet, take a 5cm round cutter and press in one quarter of the Quorn mixture. Repeat to make 4 burgers. Brush with oil and cook the burgers for 20 mins, until browned.
- Put a tomato slice on each roll, top with the burgers and gherkins and the roll tops.
