Low-calorie Beef Rogan Josh

What you need:

  • 500g cubed lean braising steak
  • 2 sliced carrots
  • 1 large thinly sliced onion
  • 3 chopped garlic cloves
  • 2.5cm grated root ginger
  • 3 split cardamom pods
  • 1tsp cumin seeds
  • 1tbsp curry powder
  • 2tsp paprika
  • 1tsp chilli powder
  • 2tbsp tomato purée
  • 300ml gluten free vegetable stock

What you need to do:

Heat a large, lidded saucepan over a medium heat and spray with calorie controlled cooking spray. Cook the cubed lean braising steak until browned all over. Remove the beef and juices from the pan and set aside. Spray the pan again, add 1 large thinly sliced onion and 2 sliced carrots and cook for 5 mins, stirring occasionally. Add the chopped garlic cloves, grated root ginger, cardamom pods, cumin seeds, curry powder, paprika, chilli powder and tomato purée and stir. Return the beef to the pot, with 300ml gluten free vegetable stock and bring to the boil. Then reduce the heat on the stove to low and partially cover to simmer gently, stirring occasionally,for 1 hour. Season dish before serving.
