Halloumi makes these veggie kebabs fab and filling – great for vegetarians.

SERVES 4 – PREP 15 MINS – COOK 5 MINS

250g pack halloumi cheese, cubed

2 small courgettes, thickly sliced

2 peppers, deseeded cut into chunks

16 baby button mushrooms

1 garlic clove, crushed

A little olive oil

1tsp dried mixed herbs

 

 

 

1 Put the cheese, courgettes, peppers, mushrooms and garlic in a bowl and toss with a little olive oil and the mixed herbs.

2 Thread on to eight skewers, then cook for 4-5 mins on a hot barbecue, turning occasionally, until lightly charred and tender.

Per serving: 282 cals, 21g fat (11g saturated), 12g carbs
