SERVES 6  – PREP 5 MINS – COOK 15 MINS

6tbsp mustard ketchup (we used Tracklements)

2tbsp white wine vinegar

3tbsp olive oil

several thyme sprigs

6 chicken breasts

Several sprigs cherry tomatoes on the vine

 

 

 

 

 

1 Mix together the mustard ketchup, vinegar, olive oil and thyme in a shallow container.

2 Season the chicken and cut several slashes in each piece. Add to the mustard mixture. Stir to coat the chicken. Cover and chill overnight.

3 Cook the chicken on a hot barbeque for 15 mins, turning as needed. (It is ready when the juices run clear).  Barbeque the tomatoes for a couple of mins, turn and cook for 2 more mins, to char.

Per serving: 235 cals, 7g fat (1.5g saturated), 1.5g carbs
