1tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1/2tsp Very Lazy Chilli (English Provender)
500g carrots, cut into chunks
400g canned chopped tomatoes
500ml vegetable stock
¼ savoy cabbage, shredded
400g can cannelini beans
handful of fresh basil leaves, if you like
1 Heat oil and fry onion in a large pot for a few mins to soften. Add the garic and chilli and cook for a couple of mins.
2 Tip in the carrots, tomatoes and stock and cabbage.
3 Add the beans. Add 2tbsp basil leaves. Cover and simmer for 20 mins until vegetables are tender. Serve with basil leaves. Offer crusty bread to the hungry crew.
