Spinach is bursting with goodness; iron, soluble fibre, vitamin A, C and K and much more. It’s one of the best vegetables recommended in cholesterol controlling and weight reduction. Try this delicious spinach and feta salad with lamb cutlets.

SERVES 4  – PREP 10 MINS – COOK 15 MINS

4-8 small French trimmed lamb cutlets (all fat removed)

25g pine nuts, toasted

180g watercress, spinach and rocket salad

100g feta cheese, cubed

200g cherry tomatoes, quartered

1tbsp balsamic vinegar

 

 

 

 

 

1 Cook the lamb chops under a preheated grill for 15 mins, turning as needed.

2 Meanwhile, toast the pine nuts in a non-stick pan for 2 mins until golden.

3 Arrange salad on plates, scatter over feta cheese and the cherry tomatoes.

4 Serve lamb cutlets with salad. Season generously and drizzle with balsamic vinegar.
