Ready-cooked chicken tikka pieces tossed into this simple salad makes a super-easy refreshing meal that’s ready in minutes.

SERVES 4 – PREP 10 MINS – COOK 5 MINS

400g can chickpeas, drained

1 small red onion, finely sliced

½ cucumber, chopped

4 tomatoes, chopped

6tbsp French dressing

4tbsp coriander, chopped

2 x 225g packs cooked chicken tikka breast pieces

4 mini naan bread

120g bag salad leaves

 

 

1 Combine the chickpeas, onion, cucumber, tomatoes, dressing and coriander. Heat the chicken according to packet instructions.

2 Grill the naan breads according to pack instructions.

3 Put the naan breads onto 4 serving plates and top with the salad leaves.

4 Spoon over the chickpea mixture and top with the chicken.
