A refreshing dessert and drink combined – that’s perfect to prepare-ahead. No one will guess you’ve used a couple of packets of jelly.

SERVES  10 – PREP 10 MINS – COOK 5 MINS

400g mixed frozen British berries, such as raspberries, redcurrants, blackberries and blackcurrants

200ml cassis

200g caster sugar

135g raspberry jelly, broken into cubes

135g blackcurrant jelly, broken into cubes

600ml Asti Spumante or Cienna Rosso – Brown Brothers sweet sparkling red

 

 

1 Divide the berries, putting the red fruits in one and deep purple in another. Pour 100ml of cassis into each pan with 100g of sugar in each.

2 Heat  each pan gently for a few mins just to dissolve the sugar and slightly soften the fruit, stir as needed.

3 Break up the raspberry jelly cubes and put into a jug with 100ml water. Repeat with the blackcurrant jelly cubes. Microwave each jug for 1 minute, then stir to dissolve the jelly.

4 Pour 300ml of Asti into each jug and stir to combine.

5 Take 10 small glasses or plastic cups, put onto a tray. Spoon the red fruits into half and the darker fruits into the other half.

6 Tip any remaining juice over the fruits, then gently pour over the liquid jellies.  Chill for at least 2 hours.
