Perk up a packet of jelly with a splash of everyone’s favourite British booze, Pimms!  Add some berries of your choice.  The perfect partner for Wimbledon!

SERVES  4 – PREP 10 MINS – COOK 5 MINS

200g mixed berries, such as strawberries, raspberries and blueberries

100ml Pimms

50g caster sugar

135g raspberry jelly, broken into cubes

300ml lemonade

 

 

 

 

 

1 Divide the berries, between 4 glasses. Pour the Pimms into a pan with the sugar.

2 Heat  gently for a few mins just to dissolve the sugar , stir as needed.

3 Break up the jelly cubes and put into a jug with 100ml water. Microwave for 1 minute, then stir to dissolve the jelly.

4 Pour the lemonade into the jug and stir to combine. Gently pour over the fruit in the glasses.  Chill for at least 2 hours.

Per serving: 210 cals, 0g fat (0g saturated), 43g carbs
