A great meat alternative recipe to cook with your leftovers on Boxing Day. This sprout squeak recipe is super quick, simple and low cal!

 

Serves : 2-3 for lunch or supper

Preparation time : 10 minutes

Cooking time : 15 minutes

Ingredients:

100g Quorn Roast leftovers, cut into 1cm cubes (Quorn Deli Ham and Quorn Chicken Style Pieces)

250g sprouts, halved

1 tbsp vegetable oil

1 medium onion, finely diced

250g leeks, washed and cut into thin rings

1 tsp Italian Seasoning

½ tsp black pepper

Salt to taste

Fresh parsley, chopped

 

Method

1.      Place the sprouts in boiling water for approximately 8-10 minutes until cooked but still firm. Drain and set aside.

2.      Heat the oil in a shallow frying pan and fry the onion for 3-4 minutes then add the leeks and cook gently until both are softened.

3.      Add the Quorn Roast and Italian seasoning and continue to cook for 3-4 minutes. Stir in the cooked sprouts and black pepper and salt to taste and continue to heat through until all the ingredients are hot.
