In the time it takes to cook a pan of pasta you can make this really quick and healthy tomato & olive pasta sauce using storecupboard ingredients. It’s so easy and delicious it will soon become a family favourite.

SERVES 4 PREP 5 MINS COOK 10 MINS

300g penne pasta

1 tbsp olive oil

1 onion, sliced

1 garlic clove, crushed

400g can chopped tomatoes

1 tbsp balsamic vinegar

Pinch of sugar

Pinch of chilli flakes

1 tbsp capers

25g sliced pitted black olives

A few fresh basil leaves

 

1 Cook the pasta in a large pan of boiling salted water for 10 mins until until just tender.

2 While the pasta is cooking, heat the oil in a large frying pan. Add the onion and cook for 3 mins, stirring, until softened. Add the garlic, tomatoes, vinegar, sugar, chilli flakes, capers and black olives. Bring to the boil then reduce the heat and simmer for 5 minutes, stirring occasionally. Season with salt and freshly ground black pepper.

3 Drain the pasta, add to the sauce and stir well to mix. Spoon into bowls and scatter over fresh basil leaves to serve.
