You’ll love this fresh, zingy melt-in-the-mouth lemon mousse, it looks beautiful, tastes heavenly and is super speedy.
SERVES 4 PREP 10 MINS
284ml pot double cream
4tbsp icing sugar
75ml white wine
8tbsp lemon curd
lemon zest strips, to decorate
biscotti or amaretti biscuits, to serve
1 Whip the cream with the icing sugar until thick enough to form stiff peaks. Fold in the wine then swirl in the lemon curd.
2 Spoon the mixture into glasses and decorate with a few lemon zest curls. Serve with biscotti or amaretti biscuits.

Cookery ed’s tip: If you don’t want to use wine you can replace it with still lemonade or elderflower cordial.
