Toasted ciabatta topped with a tasty mix of prawns, tomato, garlic, fennel seeds, lemon and parsley makes an easy starter – perfect to serve when you’ve got a crowd over.

SERVES 6 – PREP 10 MINS – COOK 5 MINS

125g cooked king prawns

3 tomatoes, chopped

2tbsp olive oil

1 garlic clove, crushed

1/2tsp fennel seeds

Grated zest of 1 lemon

2tbsp parsley, chopped

1 ciabatta loaf

 

 

 

1 Put the prawns, tomatoes, olive oil, garlic, fennel, lemon and parsley in a bowl.  Season generously and stir to combine.

2 Cut the ciabatta in half horizontally, then cut each piece into 3 and toast or grill until pale golden.

3 Top each toasted piece with the prawn and tomato mixture and serve.
