Mushroom Cheese Stacks

Great for veggies

The perfect veggi alternative to a burger! Also great as an accompaniment.  Don’t skimp on the chilli jam – because that’s what boosts the flavour.  We like Tracklements.

250g portabellini mushrooms

4tsp chilli jam

2 x 140g packs mild English goats cheese

1 garlic clove, crushed

2tsp thyme leaves

200g vine cherry tomatoes

 

1 Trim off mushroom stalks and top each one with 1/2 tsp chilli jam.

2 Slice cheese and put a goats cheese round on top of each mushroom.

3 Scatter over garlic and thyme and season. Drizzle with olive oil.

4 Cook over hot coals on a barbecue or grill with cherry tomatoes for 10 mins until softened

Per serving: 168 cals, 12g fat (8g saturated), 3.5g carbs

 

Try this

Used sliced stilton cheese instead of goats cheese and a dollop of onion chutneyinstead of chilli jam.
